  • 2 pounds lean ground beef
  • 1/4 cup red apple vinegar
  • 14.5-ounce can diced tomatoes (petite)
  • 4 cups tomato juice
  • 1 cup ketchup
  • 2 cans pinto beans (15 oz each)
  • 1 can kidney beans (16 oz)
  • 1 tablespoon light brown sugar
  • 3 tablespoons chili powder
  • 3/4 teaspoon garlic salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (or more if you want it spicier)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Sauté the diced onion for about 5 minutes until soft.
  2. Add ground beef to the pot and brown thoroughly while breaking it apart with a wooden spoon.
  3. Stir in red apple vinegar and cook for an additional minute. Then add diced tomatoes, tomato juice, ketchup, beans, brown sugar, and spices; mix well.
  4. Bring to a boil over medium heat. Reduce to medium-low and simmer for at least one hour while stirring occasionally.
