  • 1 onion, finely chopped
  • 3 chicken breasts, cut into bite-sized pieces

  • 2 tsp minced ginger

  • 1½ tsp ground coriander
  • 1½ tsp garam masala
  • ½ tsp mild chili powder (optional, for gentle warmth)
  • ½ tsp ground turmeric
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 2 tbsp tomato purée (paste)
  • ½ cup plain or natural yogurt
  • ½ cup coconut cream
  • 2 tbsp ground almonds
  • 1 tbsp sugar
  • 4 tbsp double cream
  • Fresh coriander for garnish
  • Boiled rice and/or flatbread (such as chapati or naan)

Instructions

  1. Heat ghee in a large frying pan over medium heat. Add chopped onion and sauté until softened.
  2. Add chicken pieces; cook until lightly golden.
  3. Stir in garlic, ginger, and spices; cook briefly to coat chicken.
  4. Mix in yogurt, coconut cream, and ground almonds; bring to a gentle boil then simmer until chicken is tender.
  5. Stir in double cream before serving over rice or with flatbread, garnished with fresh coriander.
