  • 1 lb boneless chicken thighs (chopped into quarters)
  • 1 large onion (diced)
  • 1 carrot (chopped)
  • 4 small russet potatoes (peeled and quartered)
  • 3 cups chicken stock
  • 1 tbsp vegetable oil
  • 3 tbsp gochujang
  • 3 tbsp soy sauce
  • 3 tbsp garlic (minced)
  • 1 tbsp white sugar
  • 1 tbsp sesame oil
  • Chopped green onions for garnish

Instructions

  1. In a small bowl, combine gochujang, soy sauce, minced garlic, sugar, and sesame oil to prepare the sauce.
  2. Heat vegetable oil in a medium pot over medium heat. Add diced onions and sauté until translucent.
  3. Add the chopped chicken thighs to the pot and brown on both sides.
  4. Stir in the quartered potatoes and chopped carrots; cook for about 1-2 minutes.
  5. Pour in chicken stock and add the prepared sauce. Bring to a boil, then reduce heat to simmer for 15-20 minutes until chicken is tender.
  6. Garnish with chopped green onions before serving with rice.
