  • 4 boneless, skinless chicken breasts
  • 4 ounces cream cheese (softened)
  • 1 tablespoon ranch seasoning mix
  • 4 ounces shredded cheddar cheese
  • 4 slices turkey bacon (cooked and diced)
  • Salt and pepper to taste
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the softened cream cheese, half of the sliced scallions, and ranch seasoning mix. Mix until smooth.
  3. Lightly grease a 9 x 13 baking dish with cooking spray.
  4. Pound the chicken breasts to about 1/4-inch thickness. Season both sides with salt, pepper, and smoked paprika before placing them in the baking dish.
  5. Spread about 2 tablespoons of the cream cheese mixture over each chicken breast.
  6. Bake uncovered for 12 minutes. Remove from oven, sprinkle with shredded cheddar cheese and diced turkey bacon.
  7. Return to the oven for an additional 10-15 minutes until the internal temperature reaches at least 165°F (74°C).
  8. Garnish with remaining scallions before serving.
