  • 2 tablespoons loose leaf Earl Grey tea (or 2 teabags)
  • 1 whole vanilla bean
  • 5 large egg yolks
  • ⅓ cup granulated sugar
  • 1 cup heavy cream (or whipping cream)
  • 4 tablespoons granulated sugar (for caramelizing)

Instructions

  1. Infuse flavors by combining milk, tea, vanilla pod, seeds, and heat until boiling. Let steep for 10 minutes before straining.
  2. Preheat your oven to 320°F (160°C) and prepare a water bath.
  3. In a bowl, mix egg yolks and sugar until smooth, then stir in infused milk and cream.
  4. Pour into ramekins and bake in the water bath for 25-30 minutes until set but slightly jiggly.
  5. Cool at room temperature before chilling in the fridge for at least 3 hours.
  6. Just before serving, caramelize sugar on top using a kitchen torch or broiler.
