  • 23 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1620 frozen veggie dumplings
  • 2 bok choy bulbs
  • 1 zucchini

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, and grated garlic and ginger until smooth.
  3. Chop bok choy and zucchini; add them to the baking dish and stir to coat with the broth.
  4. Arrange frozen dumplings on top without overlapping; spoon some broth over them.
  5. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes until bubbly and golden.
  6. Serve hot over jasmine rice or noodles, garnished as desired.
