  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 3/4 cup olive oil
  • 1 cup whole milk
  • 1 1/2 cups kataifi pastry
  • 3/4 cup pistachio butter
  • 1 1/2 cups dark chocolate (chopped)
  • 3/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix eggs, olive oil, milk, and vanilla until smooth. Combine both mixtures until just combined.
  4. Divide batter into pans and bake for 25–30 minutes; cool completely.
  5. Toast kataifi strands in butter until golden brown and cool.
  6. Melt white chocolate and mix with pistachio butter; fold in toasted kataifi.
  7. For ganache, heat cream with honey; pour over chopped dark chocolate and whisk until smooth.
