  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. In a large pot, simmer cubed ginger with water for 1 hour and 15 minutes. Drain but reserve ½ cup of the liquid.
  3. Chill the cooked ginger in the refrigerator for 4 hours.
  4. Combine chilled ginger, reserved water, and sugar in a pot; bring to a boil for 1 minute.
  5. Stir in liquid pectin; simmer for an additional 7 minutes while skimming any foam.
  6. Sterilize jars by boiling them in water.
  7. Fill each jar with marmalade, leaving about ¼ inch space at the top; remove air bubbles and seal tightly.
  8. Process jars in a boiling water bath for 15 minutes, then cool completely on a clean towel or rack.
