  • 1 cup mixed nuts (almonds, cashews, pecans)
  • 1 cup dark chocolate chips (70% cocoa)
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon sea salt (plus extra for topping)
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 2 tablespoons coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together until smooth.
  3. In a large mixing bowl, combine mixed nuts, rolled oats, honey or maple syrup, and vanilla extract. Stir in half of the melted chocolate until well coated.
  4. Press the mixture evenly into the prepared baking dish and drizzle with remaining melted chocolate.
  5. Bake for 15-20 minutes until golden brown and sprinkle with sea salt while warm.
  6. Allow to cool completely before cutting into squares.
