  • 2 teaspoons Sichuan peppercorns
  • 1 teaspoon whole coriander seeds
  • 1 tablespoon apple vinegar (or dry apple juice)
  • 1 teaspoon salt
  • 1 teaspoon peanut oil (or vegetable oil)
  • 2 teaspoons cornstarch
  • 1/2 cup homemade chili oil (and more to taste)
  • 3 tablespoons chinkiang vinegar
  • 4 teaspoons light soy sauce
  • 4 teaspoons dark soy sauce
  • 8 cloves garlic, minced
  • 2 inches ginger, minced
  • 1 red onion, thinly sliced
  • 1 hot green chili, sliced
  • 1/2 bunch cilantro, chopped

Instructions

  1. Prepare your noodles ahead of time to ensure they are ready when the lamb is cooked.
  2. In a mixing bowl, combine the sliced lamb with cumin seeds, Sichuan peppercorns, coriander seeds, vinegar, salt, peanut oil, and cornstarch. Let it marinate for at least 15 minutes.
  3. Heat a wok or large skillet over high heat with peanut oil. Sauté minced garlic and ginger until fragrant.
  4. Add marinated lamb to the wok and stir-fry until browned but not overcooked.
  5. Mix in sliced red onion and green chili; stir-fry for an additional minute before adding soy sauces and vinegar.
