  • 1 ½ lb cucumbers (sliced)
  • ½ red onion (finely sliced)
  • ¼ cup fresh dill (chopped)
  • ¾ cup Greek yogurt
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon lemon juice
  • ¼ teaspoon garlic (grated)
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, mix together Greek yogurt, olive oil, lemon juice, grated garlic, salt, and black pepper until smooth.
  2. Slice the red onion finely and cut cucumbers lengthwise then slice into 3mm thick pieces.
  3. In a large bowl, combine sliced cucumbers, red onion, and chopped dill. Pour the dressing over the top and toss gently until well coated.
  4. Serve immediately or refrigerate for at least 30 minutes to let flavors meld.
