  • 8 oz imitation crab (diced)
  • 3 cups cooked white or brown rice
  • 1 cucumber (diced)
  • 1 large avocado (diced)
  • ¼ cup cilantro (chopped)
  • ¼ cup soy sauce
  • ¼ cup sugar
  • 3 tbsp sugar and vinegar (instead of mirin)
  • ¼ cup mayo
  • 1 tbsp Sriracha
  • 1 cup Panko breadcrumbs
  • ¼ cup olive oil

Instructions

  1. Cook the rice according to your rice cooker instructions until fluffy; set aside.
  2. In a mixing bowl, whisk together soy sauce, sugar, sugar and vinegar (instead of mirin), mayo, and Sriracha until well combined.
  3. Heat olive oil in a skillet over medium heat, add Panko breadcrumbs, and toast until golden brown; remove from heat.
  4. Assemble each bowl by layering cooked rice as the base, then top with diced imitation crab, cucumber, avocado, and cilantro.
  5. Drizzle with the prepared sauce and sprinkle toasted Panko on top.
