  • 1.52 lbs fresh green beans (trimmed and cut into 2–3" pieces)
  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb smoked sausage (sliced into rounds, chicken or turkey options recommended)
  • 1 stick butter (1/2 cup)
  • 1 tablespoon Cajun seasoning (divided)
  • 1/2 teaspoon pepper

Instructions

  1. Place halved potatoes in a slow cooker and season with pepper and half of the Cajun seasoning.
  2. Add the stick of butter on top.
  3. Layer green beans and diced onion over the potatoes, sprinkling with remaining Cajun seasoning.
  4. Top with sliced sausage.
  5. Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once each hour.
  6. Before serving, taste and adjust seasoning if needed.
  7. Keep on Warm setting until ready to serve.
