  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta (uncooked)
  • 1 cup Parmesan Reggiano

Instructions

  1. In a large skillet over medium heat, cook the turkey bacon until crispy. Drain and slice the bacon.
  2. Add the bacon and remaining ingredients (onion, carrots, celery, garlic, herbs, tomato paste, crushed tomatoes, beans, broth) to your slow cooker. Stir to combine.
  3. Cover and cook on low for 7–8 hours or high for 4–5 hours.
  4. About 30 minutes before serving, stir in the uncooked ditalini pasta.
  5. Serve hot with a sprinkle of grated Parmesan cheese on top.
