  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme leaves
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a mixing bowl, combine sweet potato slices with melted butter, olive oil, garlic powder, thyme, salt, and pepper. Mix until evenly coated.
  3. Layer 5–6 slices in each muffin cup, slightly overlapping, and sprinkle with Parmesan cheese.
  4. Bake for 30–35 minutes until crispy and golden brown. In the last 5 minutes, top with remaining Parmesan.
  5. Cool for 5 minutes before removing from the tin. Garnish with extra thyme if desired.
