  • 1 pound chicken tenderloins or chicken breasts (cut into strips)
  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying
  • Sweet chili sauce for serving

Instructions

  1. Prepare four shallow bowls: combine flour, chili powder, salt, and pepper in the first; whisk together eggs and water in the second; place coconut in the third; and panko breadcrumbs in the fourth.
  2. Coat each chicken strip first in the flour mixture, then dip into the egg wash, coat with coconut flakes, and finish with panko crumbs.
  3. Heat oil in a large skillet over medium heat and fry the coated tenders for 2–3 minutes per side until golden brown.
  4. Allow to cool slightly on a wire rack before serving warm with sweet chili sauce.
