  • 4 toasted croissants
  • 3 cups chopped romaine lettuce
  • ½ cup shaved Parmesan cheese
  • 45 boneless, skinless chicken thighs
  • ½ cup olive oil
  • 1 large egg
  • 2 tbsp flour
  • 3 tbsp cornstarch
  • ½ cup panko breadcrumbs
  • Canola oil, for frying
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp minced garlic
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp black pepper
  • Salt, to taste

Instructions

  1. 1. Marinate the chicken thighs in a mixture of soy sauce, sesame oil, minced garlic, onion powder, salt, and black pepper for at least 20 minutes.
  2. 2. For the crunchy topping, melt butter in a frying pan and toast panko breadcrumbs until golden brown. Set aside.
  3. 3. Prepare the dressing by blending olive oil, shaved Parmesan cheese, lemon juice, anchovy fillets, garlic, Dijon mustard, red apple vinegar, black pepper, and salt until smooth.
  4. 4. Heat canola oil to 350°F (175°C) in a pot and fry marinated chicken thighs until golden brown and cooked through. Drain excess oil on a wire rack.
  5. 5. Assemble sandwiches by mixing romaine lettuce with Caesar dressing and toasted panko. Spread additional dressing on croissant bottoms before layering with crispy chicken and salad mixture.
