  • 1 1/2 tbsp granulated sugar
  • 1/8 tsp salt
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar
  • 1/2 cup unsalted butter (for sauce)
  • Thinly sliced orange peel
  • 3/4 cup orange juice

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. In another bowl, whisk together eggs, vanilla extract, milk, and water. Gradually add dry ingredients to wet until smooth.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter. Pour about 1/4 cup batter into the skillet, swirling to cover the bottom evenly. Cook for 1-2 minutes until golden; flip and cook for another minute. Repeat with remaining batter.
  3. In a saucepan over medium heat, melt castor sugar until caramelized lightly. Add butter and orange peel, then gradually stir in orange juice until smooth.
  4. Fold each crepe into quarters and place them in the sauce briefly before serving warm.
