  • 4 lemons (peel only)
  • 1 liter milk (preferably 2% UHT)
  • 600 grams granulated sugar (about 3 cups)
  • 1 vanilla bean

Instructions

  1. Wash the lemons thoroughly and use a vegetable peeler to remove the peel, avoiding the bitter pith.
  2. Place the lemon peels in a mason jar and pour in the alcohol alternative (like fruit juice or vinegar), sealing tightly. Let steep for at least 6 days.
  3. Strain out the peels using cheesecloth into a clean bottle.
  4. In a saucepan, warm the milk, sugar, and vanilla bean over medium-low heat until the sugar dissolves.
  5. Allow to cool before combining with the strained lemon infusion, then strain again and store in a decanter.
