Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Steam chopped vegetables until tender (about 5–7 minutes).
  3. In a medium saucepan, melt butter and stir in flour for 1–2 minutes to make a roux.
  4. Gradually whisk in warm milk and cook until thickened (3–5 minutes). Add garlic powder, nutmeg, salt, pepper, cheddar, and Parmesan; stir until smooth.
  5. Combine steamed vegetables with cheese sauce in a large bowl until well-coated.
  6. Transfer to the baking dish and sprinkle with breadcrumbs if desired.
  7. Bake for 20–25 minutes until bubbly and golden, broiling for an additional 2–3 minutes if desired. Let rest before serving.
