  • 1 pound ground turkey sausage
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  2. In a skillet over medium-high heat, warm olive oil and brown the ground turkey sausage for about 5-7 minutes. Transfer to a plate.
  3. In the same skillet, sauté garlic until fragrant, then add sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Stir in cream and simmer for 3-5 minutes.
  4. Add Parmesan cheese, cooked sausage, and baby spinach to the sauce; cook until spinach wilts.
  5. Toss the cooked pasta with the sauce; adjust the consistency with reserved pasta water if necessary.
  6. Serve hot garnished with fresh basil leaves and extra Parmesan cheese.
