  • 2 Tbsp unsalted butter
  • ½ tsp salt
  • ½ tsp oregano
  • ½ tsp crushed red pepper flakes
  • ½ tsp smoked paprika
  • ¼ tsp ground black pepper
  • 16 oz button mushrooms
  • 10 oz cherry tomatoes
  • 4 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (roughly chopped)
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • ½ cup grated parmesan
  • 2 Tbsp fresh chopped basil

Instructions

  1. In a large sauté pan over medium heat, melt 2 tablespoons of unsalted butter. Add ½ teaspoon each of salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ teaspoon ground black pepper. Sauté until fragrant.
  2. Stir in 16 oz of button mushrooms, 10 oz of cherry tomatoes, 4 minced garlic cloves, and ½ cup of chopped sun-dried tomatoes. Cook uncovered for about 15 minutes until the mushrooms release their moisture.
  3. Pour in 1 cup of vegetable broth and let it simmer until the sauce thickens (approximately 10 minutes).
  4. Remove from heat and mix in 1 cup of heavy cream, followed by ½ cup grated parmesan cheese and 2 tablespoons fresh chopped basil. Serve warm.
