  • 1 lb boneless skinless chicken breasts (sliced thin)
  • 1 teaspoon Italian seasoning
  • Salt & pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Season sliced chicken with Italian seasoning, salt, and pepper.
  2. In a skillet over medium-high heat, add olive oil and sear the chicken until golden brown. Remove from skillet.
  3. Sauté minced garlic in the same skillet until fragrant.
  4. Add orzo and sun-dried tomatoes; toast for a couple of minutes.
  5. Pour in chicken broth and heavy cream; bring to simmer and cook until orzo is tender.
  6. Stir in parmesan cheese and fresh spinach until wilted.
  7. Return cooked chicken to the skillet to warm through before serving.
