  • 4 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp dried thyme
  • Fresh parsley (chopped)

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, add olive oil and sear the seasoned chicken for 5-7 minutes on each side until golden brown. Set aside.
  3. In a pot, combine rice with chicken broth and salt. Bring to a boil, then cover and simmer for 18-20 minutes until cooked.
  4. In the same skillet, melt unsalted butter over medium heat. Whisk in flour to create a roux, then gradually add whole milk and chicken broth until smooth.
  5. Stir in garlic powder, thyme, cheddar cheese, and Parmesan cheese until melted and creamy.
  6. Return seared chicken to the skillet with the sauce and simmer for 5 minutes.
  7. Fluff cooked rice with a fork and serve topped with creamy smothered chicken.
