  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning

  • Salt and black pepper, to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Cook rigatoni in salted boiling water until al dente; drain and set aside.
  2. Season chicken strips with Cajun seasoning and smoked paprika. Sear in a skillet with olive oil and butter until golden brown; remove and keep warm.
