  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss halved baby potatoes with olive oil, salt, and pepper until evenly coated. Spread them out in a single layer on the prepared baking sheet.
  3. Roast the potatoes for 25-30 minutes, turning halfway through until golden brown and tender.
  4. While the potatoes are roasting, melt butter in a skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
  5. Stir in heavy cream and simmer for 3-4 minutes until slightly thickened. Remove from heat and add grated Parmesan cheese until melted and smooth.
  6. Once the potatoes are done, transfer them to a serving dish and pour the creamy sauce over them. Garnish with chopped fresh parsley before serving.
