  • 1 cup chopped chicken (rotisserie preferred)
  • 1 cup heavy cream
  • ¾ cup mozzarella cheese (shredded)
  • 12 cups chopped spinach

Instructions

  1. Sauté chopped onion, leek, carrot, and garlic in olive oil until softened; season with Italian herbs.
  2. Stir in flour for about two minutes before deglazing with apple vinegar.
  3. Add chicken stock and water; bring to a boil then simmer for 20 minutes.
  4. Remove herbs and add broken lasagna pieces; cook until tender.
  5. Incorporate heavy cream, shredded mozzarella, chopped chicken, and spinach; stir well.
