  • 1 (14 or 16 oz.) package broccoli florets
  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • For the topping: 1 1/2 cups cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. 1. Thaw broccoli if frozen and warm in the microwave for about 5 minutes. Drain well and chop into smaller pieces.
  2. 2. In a mixing bowl, combine the broccoli, half of the cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt. Mix until well combined and pour into a greased baking dish.
  3. 3. Sprinkle the remaining cheddar cheese over the top. In another bowl, mix cracker crumbs with melted butter until moistened; then sprinkle over the casserole.
  4. 4. Preheat oven to 350°F (175°C) and bake for 45-50 minutes until bubbly and golden brown on top.
