  • 1 cup shiitake mushrooms, sliced

  3. Meanwhile, heat olive oil in a skillet over medium heat. Sauté onions until translucent. Add mushrooms and carrots; cook for 5–7 minutes until tender.
  4. Fluff quinoa with a fork and mix with sautéed vegetables in the skillet. Season with salt and pepper.
  5. Serve warm, garnished with chopped pecans.
