  • 1 cup canned pinto beans (drained and rinsed)
  • 1 cup BBQ sauce (divided)
  • 1 cup sharp cheddar cheese (shredded)
  • ½ cup plain breadcrumbs
  • 2 large eggs (beaten)
  • 1 small yellow onion (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic (minced)
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly spray a large loaf pan with nonstick cooking spray.
  2. In a skillet over medium heat, sauté onion and bell pepper in vegetable oil until softened. Stir in minced garlic for another minute before removing from heat.
  3. In a mixing bowl, combine cooled vegetables with ground beef, beaten eggs, pinto beans, breadcrumbs, half the BBQ sauce, Worcestershire sauce, and seasonings. Mix gently until just combined.
  4. Shape half of the meat mixture into a loaf in the prepared pan. Create a shallow trench down the center and fill it with shredded cheese. Top with remaining meat mixture and press to seal edges.
  5. Brush the top with ¼ cup BBQ sauce. Bake for 40 minutes; then brush again with remaining sauce and bake for an additional 25-30 minutes until cooked through (internal temperature should reach 160°F /71°C).
  6. Allow resting for about 5 minutes before slicing.
