  • 6 chicken or turkey sausages (about 14 oz)
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice
  • 3 medium potatoes, peeled and chunked
  • Salt, to taste
  • 1 1/2 cups light cream or half-and-half

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, celery, carrots, and garlic until softened (5–7 minutes).
  2. Add sausages to the pot and cook until browned on all sides.
  3. Stir in thyme and sprinkle flour over the mixture; mix well.
  4. Gradually pour in chicken or vegetable broth while stirring to avoid lumps. Add bay leaves.
  5. Bring to a boil, then reduce heat to low. Stir in wild rice and potatoes.
  6. Cover and simmer for about 45 minutes until rice and potatoes are tender.
  7. Remove bay leaves and stir in light cream before serving.
