  • 1 cup whole milk
  • ½ cup granulated sugar
  • 2 tablespoons instant coffee granules (or ½ cup strong brewed espresso)
  • 2 teaspoons vanilla extract
  • 2 ½ teaspoons unflavored powdered vegan gelatin
  • 3 tablespoons cold water

Instructions

  1. In a small bowl, sprinkle the vegan gelatin over cold water and let bloom for 5–10 minutes.
  2. In a medium saucepan, combine heavy cream, milk, sugar, and instant coffee (or brewed espresso). Heat over medium heat until dissolved (do not boil).
  3. Remove from heat and stir in bloomed vegan gelatin until fully dissolved. Add vanilla extract.
  4. Strain the mixture into a measuring cup using a fine mesh sieve to ensure smoothness.
  5. Pour into ramekins or dessert glasses and cover with plastic wrap. Refrigerate for at least 4 hours until set.
  6. Before serving, top with whipped cream, chocolate shavings, or cocoa powder.
