  • 5 eggs
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 24 ladyfingers
  • Coconut flakes for layering
  • 1/2 cup powdered sugar
  • 1/2 cup coconut cream
  • 1/2 cup vanilla extract (alcohol-free)
  • 1 tsp cinnamon

Instructions

  1. Separate the egg yolks from the whites in a large bowl.
  2. Whisk the egg yolks with powdered sugar until pale yellow.
  3. Mix in mascarpone, coconut cream, and half the coconut milk until well blended.
  4. In another bowl, whip heavy cream with powdered sugar until stiff peaks form, then gently fold into the mascarpone mixture.
  5. Chill the cream mixture while preparing the soaking mixture by combining condensed milk, remaining coconut milk, vanilla extract, and cinnamon in a large bowl.
  6. Dip ladyfingers quickly into the soaking mixture and layer them in your dish.
  7. Spread half of the cream mixture over the ladyfingers and sprinkle with coconut flakes. Repeat layering with remaining ingredients.
  8. Top with cinnamon and additional coconut flakes before refrigerating for at least 12 hours to set.
