  • 2 lbs beef chuck, cut into large cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • 2 cans (13.5 oz each) coconut milk

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; remove from pot and set aside.
  2. In the same pot, sauté chopped onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for an additional minute.
  3. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder; cook for about 2 minutes.
  4. Return seared beef to the pot; mix well with spices.
  5. Pour in enough coconut milk to cover the beef. Bring to a gentle simmer, reduce heat to low, cover, and cook for 1.5 to 2 hours until tender.
  6. Serve hot over rice or quinoa.
