  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time along with vanilla and coconut extracts.
  4. Gradually mix in dry ingredients alternating with coconut milk until smooth.
  5. Pour batter into prepared pans and bake for 25–30 minutes until golden brown. Cool completely on a rack.
  6. For frosting, beat cream cheese with powdered sugar until smooth; whip heavy cream to stiff peaks and fold into the cream cheese mixture.
  7. Layer cakes with frosting between each layer and cover the top and sides with remaining frosting. Press toasted coconut onto the surface.
  8. Refrigerate for at least one hour before serving.
