  • 1 tablespoon coconut oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 can (13.5 oz) coconut milk

Instructions

  1. In a large pot or Dutch oven, heat the coconut oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and grated ginger; cook for another 2 minutes until fragrant.
  3. Reduce heat slightly and add curry powder, ground cumin, and turmeric to the pot. Stir well to coat the onions in the spices and toast for an additional minute.
