  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 can chickpeas (15 oz)
  • 1 can coconut milk (13.5 oz)
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 cup plain yogurt

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté finely chopped onion until translucent, then add minced garlic and grated ginger until fragrant.
  2. Increase heat to medium-high and add the beef stew meat, browning it on all sides. Season with salt, pepper, curry powder, cumin, and optional chili flakes.
  3. Stir in drained chickpeas and tomato paste, then pour in coconut milk and beef broth; mix well.
  4. Bring to a simmer, reduce heat to low, cover, and cook for about 45 minutes to an hour until the beef is tender.
  5. For the garlic naan, combine flour, salt, baking powder, and yogurt in a bowl; knead into dough. Roll out into flat circles and cook on a hot skillet until golden brown on both sides.
