  • 1 cup breadcrumbs
  • ½ cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup ketchup
  • 1 tablespoon vegan Worcestershire sauce
  • ⅓ cup ketchup (for glaze)
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, vegan Worcestershire sauce, salt, and black pepper. Mix until just combined.
  3. Transfer the mixture to the loaf pan and shape it into a loaf.
  4. For the glaze, mix together ketchup, brown sugar, apple cider vinegar, and Dijon mustard in a small bowl. Spread half of the glaze over the meatloaf.
  5. Bake for 45 minutes. Remove from oven and apply the remaining glaze on top; bake for an additional 15 minutes until fully cooked (internal temperature should reach 160°F / 70°C).
  6. Allow resting for about 10 minutes before slicing and serving.
