  • 50g caster sugar
  • 10g instant yeast
  • 250ml cool water
  • 250g chilled unsalted butter (at least 82% fat)
  • 1 medium egg (for glazing)

Instructions

  1. In a stand mixer with a dough hook, combine flour, salt, sugar, and yeast. Mix in cool water until a stiff dough forms.
  2. Chill the dough for one hour in a plastic bag.
  3. Roll out the dough and sandwich chilled butter between layers before folding and chilling again.
  4. Repeat the rolling and folding process several times to build layers.
  5. Shape into croissants, proof until doubled in size, then bake at 200°C (392°F) for 15–20 minutes until golden brown.
