  • 1 and 1/2 teaspoons vanilla extract
  • 3 large eggs, at room temperature
  • 3/4 cup packed light or dark brown sugar
  • 1/2 cup all-purpose flour
  • 1 Tablespoon ground cinnamon
  • 5 Tablespoons unsalted butter, melted for swirl mixture
  • 1 and 1/2 cups heavy cream, cold
  • 2 Tablespoons brown sugar
  • 1 teaspoon pure vanilla extract
  • optional: ground cinnamon, for garnish

Instructions

  1. Preheat the oven to 350°F (177°C). Prepare an ungreased springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter for the crust; press into the pan and pre-bake for 10 minutes.
  3. Beat cream cheese and sugar until smooth; add sour cream and vanilla. Incorporate eggs one at a time.
  4. Combine brown sugar, flour, and cinnamon for the swirl mixture; mix in melted butter.
  5. Layer cheesecake batter and swirl mixture in the crust; gently swirl together.
  6. Bake in a water bath for 65-85 minutes until set but slightly wobbly in the center.
  7. Cool gradually in the oven before refrigerating for at least four hours.
  8. Whip cream with brown sugar and vanilla for topping; serve on chilled slices.
