  • 1/4 cup packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 4 ounces cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 24 tablespoons milk (adjust to desired consistency)

Instructions

  1. In a small bowl, mix together the melted butter, brown sugar, and ground cinnamon until well combined. Set aside.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. It’s okay if there are some lumps.
  3. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or cooking spray. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Immediately swirl about 1 tablespoon of the cinnamon filling on top of each pancake in a circular motion. Cook the pancakes for about 2-3 minutes until bubbles form on the surface and the edges look set. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  4. In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy. Add the powdered sugar and vanilla extract, beating until well combined. Gradually add milk, one tablespoon at a time, until you reach your desired glaze consistency—it should be smooth and pourable.
  5. Stack the cinnamon roll pancakes on a plate. Drizzle generously with cream cheese glaze. Optionally sprinkle with additional cinnamon or chopped nuts for extra flavor and texture.
