  • ⅔ cup (145g) brown sugar
  • 1 cup (250ml) thickened cream (or plant-based alternative)
  • 1 cup (250ml) milk (or plant-based alternative)
  • 10g glucose syrup (or corn syrup)
  • ¼ teaspoon vanilla extract
  • 1 pinch salt
  • ½ cup (100g) semi-sweet chocolate (or vegan chocolate)
  • 2½ teaspoons (10g) refined coconut oil (or vegetable oil)
  • 1 cup (100g) walnut pieces

Instructions

  1. Melt chocolate and coconut oil in a heatproof bowl until smooth. Pour into a lined container to set.
  2. Slice bananas and sauté them in a pan with brown sugar until caramelized, then let cool.
  3. Heat milk, cream, and glucose syrup until just simmering. Blend with cooled bananas until smooth.
  4. Chill the mixture for at least 4 hours before churning in an ice cream maker.
  5. Fold in chocolate chunks and walnuts during the last minutes of churning, then transfer to a container and freeze until firm.
