  • 1 cup vegetable oil
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 cups grated zucchini
  • 12 oz semi-sweet chocolate chips (divided)

  1. Preheat your oven to 350ºF and prepare two loaf tins by greasing them.

  3. Gradually add in the flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg; mix until just combined.
  4. Fold in the grated zucchini and 8 oz of semi-sweet chocolate chips.
  5. Pour the batter evenly into the prepared loaf tins and top with remaining chocolate chips.
  6. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  7. Allow the loaves to cool in their pans for about 10 minutes before transferring them to a cooling rack.
