  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 cups grated zucchini (approx. 3 medium zucchinis)
  • 12 oz semi-sweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and prepare two greased bread loaf tins.
  2. In a large bowl, whisk together sugar, eggs, vegetable oil, and vanilla until well combined.
  3. Add in all-purpose flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg. Mix until just combined.
  4. Gently fold in grated zucchini and 8 oz of chocolate chips until evenly distributed.
  5. Divide the batter between the prepared loaf tins and top with remaining chocolate chips.
  6. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool in pans for about 5–10 minutes before transferring to racks to cool completely.
