  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Combine wet and dry mixtures; stir in hot water.
  3. Pour batter into prepared pans and bake for about 35 minutes or until a toothpick comes out clean. Cool completely.
  4. For the mousses: Heat 1 cup of cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch; temper with hot cream. Divide custard into two bowls; stir in melted dark and white chocolates respectively.
  5. Whip remaining cream to stiff peaks; fold into each mousse mixture.
  6. Assemble by layering one cake round with dark mousse and then white mousse on top; chill for at least 30 minutes before adding the second layer of cake.
  7. Prepare ganache by heating cream and pouring over chopped milk chocolate; stir until smooth.
  8. Top the chilled cake with ganache and decorate as desired.
