  • 1 large egg yolk (room temperature)
  • 2 1/2 teaspoons vanilla extract

Instructions

  1. In a heavy-bottomed saucepan, melt the butter until it turns golden brown and nutty.
  2. Allow the melted butter to cool to room temperature.
  3. In a bowl, whisk together flour, cornstarch, baking soda, and sea salt; set aside.
  4. Beat the cooled butter with both sugars in a mixer until sandy in texture.
  5. Add egg, yolk, and vanilla extract; mix until smooth.
  6. Gradually incorporate dry ingredients until just combined; avoid overmixing.
  7. Chill the dough for at least one hour (up to 72 hours).
  8. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Portion the dough into balls and place them on prepared sheets about 2 inches apart.
  10. Bake for 8–10 minutes or until golden brown; let cool slightly before transferring to a wire rack.
