  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ¾ cup mini chocolate chips
  • 1 quart vanilla ice cream, softened
  • 1 quart chocolate ice cream, softened
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a separate bowl, cream together softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
  4. Beat in the egg until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Fold in mini chocolate chips.
  6. Spread the cookie dough batter evenly into the prepared pan and bake for 20-25 minutes or until a toothpick comes out clean. Allow cooling completely.
  7. Once cooled, layer softened vanilla ice cream on top of the cookie cake and freeze for 30 minutes. Follow with a layer of softened chocolate ice cream and freeze again for another 30 minutes.
  8. For the ganache, heat heavy cream in a saucepan until simmering. Remove from heat and stir in semi-sweet chocolate chips until melted and smooth.
  9. Allow ganache to cool slightly before pouring over the top layer of chocolate ice cream.
  10. Freeze the entire cake for at least 3 hours before slicing and serving.
