Chickpea Salad Melts are delicious vegetarian sandwiches that blend creamy mashed chickpeas with crunchy vegetables and gooey melted cheese. Perfect for lunch, dinner, or gatherings, these hearty melts offer a satisfying meat-free option that everyone will love.

  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1/2 cup diced celery
  • 1/2 cup diced pickles
  • 1/3 cup diced red onion
  • 12 tablespoons fresh dill, chopped
  • 2 teaspoons Dijon mustard
  • 1/4 cup mayonnaise (vegan or regular)
  • 8 slices whole wheat sandwich bread
  • 8 slices sharp cheddar cheese (or preferred cheese)

Instructions

  1. In a medium bowl, mash the rinsed chickpeas with a fork, leaving some whole for texture. Mix in diced celery, pickles, red onion, dill, Dijon mustard, and mayonnaise. Season with salt and pepper to taste.
  2. Heat a large pan over medium-low heat. Butter one side of each bread slice. Place half of the slices butter-side down on a cutting board and top each with cheese followed by a generous portion of the chickpea mixture. Cover with remaining slices butter-side up.
  3. Cook in the heated pan for 3-5 minutes per side until golden brown and cheese is melted.
