  • 4 cups mixed stir-fry vegetables (broccoli, bell peppers, carrots, snap peas)
  • 2 tbsp soy sauce
  • 0.25 cup soy sauce (for sauce)
  • 3 tbsp vegetable oil
  • 1 tbsp cornstarch
  • 1 tbsp rice apple vinegar or dry apple juice
  • 0.5 tsp white pepper
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch (to thicken sauce)
  • 0.25 cup chicken broth or water
  • 1 tbsp fresh ginger (minced)
  • 4 cloves garlic (minced)
  • 3 stalks green onions (cut into 1-inch pieces)
  • sesame seeds (for garnish)

Instructions

  1. Marinate diced chicken in soy sauce and cornstarch for 10 minutes.
  2. While marinating, chop mixed vegetables and combine stir fry sauce ingredients in a bowl.
  3. Heat vegetable oil in a wok or skillet over medium-high heat, then sear chicken until golden brown (5-7 minutes). Remove from pan.
  4. In the same pan, sauté garlic and ginger; then add mixed vegetables and cook until crisp-tender (3-4 minutes).
  5. Return chicken to the pan, add stir fry sauce, toss everything together for another 2-3 minutes until heated through.
