  • 3 packages instant ramen noodles (discard flavor packets)
  • 1 cup diced red bell pepper
  • 1 cup sliced white button mushrooms
  • ½ cup diced sweet yellow onion
  • 1 cup broccoli florets
  • For the sauce: 3 tablespoons regular soy sauce
  • 3 tablespoons dark soy sauce
  • 3 tablespoons hoisin sauce
  • 1 tablespoon rice apple vinegar
  • 2 teaspoons sriracha
  • ¼ teaspoon white ground pepper

Instructions

  1. In a mixing bowl, whisk together the sauces: soy sauces, hoisin sauce, rice apple vinegar, sriracha, and white pepper.
  2. Boil water in a saucepan and cook ramen noodles for 1-2 minutes until soft. Drain and rinse with cold water.
  3. Heat oil in a skillet over medium-high heat; cook chicken for 4-5 minutes until fully cooked. Remove chicken.
  4. In the same skillet, sauté red bell pepper, mushrooms, and onions for 2-3 minutes until slightly tender.
  5. Add broccoli and sauté until bright green. Stir in garlic and ginger; cook for another minute.
  6. Return chicken to the skillet; add cooked noodles. Pour sauce over everything and toss to combine.
  7. Serve hot with optional garnishes like sliced green onions or toasted sesame seeds.
